Black Bean Brownies + Mixed Berries
Brownies are one of my favorite desserts. However, I only make them when we are having multiple people over, otherwise I could eat an entire pan within 24 hours! While I still enjoy fully indulging in my favorite treats, this Valentine's Day I want to put a healthy spin on one of my all time favorites.
This recipe was my first experience with black bean brownies and I was pleasantly surprised! Not only are they tasty, but they're also much lower in sugar than the typical store-bought brands. Black beans are packed with fiber, which helps our digestive system function properly and improve our colon health! They're also extremely high in folate, a major contributor to the health and regeneration of our cells!
This fruit concoction is incredibly easy to throw together and is so delicious that it could honestly stand alone. In fact, I've often served this as a dessert by itself and it's become a favorite among my girlfriends! Topping the brownies with mixed berries adds more fiber, antioxidants, and a plethora of vitamins and minerals to your dessert.
(Side note: even if you're eating regular brownies, add some berries on top! This way you're still able to enjoy a treat while also giving your body the nutrients it needs!)
