Persian Lime Chicken and Brown Rice
Yesterday, in the Wellness IRL series, Caitlin shared one of her favorite healthy meals with us! I love trying new (and easy) recipes, and I always consider it a bonus if they contain mexican flavors! So the moment she mentioned this Persian Lime Chicken + Brown Rice dish, I couldn't wait to try it!
I was pretty overjoyed once I began making this dish and realized it required very little prep. I truly love a crock pot recipe, especially this time of year. They require hardly anything of you and really allow the flavors to soak in while everything cooks! This dish is packed with flavor, as well as lean protein, fiber, and healthy fats!
I will definitely be adding this recipe to my monthly repertoire! In fact, one of my goals for this year is to cook dinners at home 4 nights during the week. This will be a great substitution for the nights my husband and I would usually succumb to getting take out.
