Rosemary Sweet Potato Hash + Poached Eggs
I could probably eat a sweet potato, prepared in any way, at every meal. I love them that much! They’re delicious, full of nutrients, and go with just about anything! They are rich in vitamins A, C, and B6 and the minerals Calcium, Potassium, Iron, and Manganese. All of those things support so many of the body’s health functions (the growth and repair of tissues, bone health, energy production, maintaining kidney health, improving brain and nervous system functions, liver detoxification... just to name a few)!
Sweet potatoes are one of my go-to vegetables and I’m always looking for different ways to try them! I get so excited when restaurants I like have healthy options that taste great and leave me feeling comfortably full. One of these options I encountered while out for brunch was a sweet potato and kale hash that tasted INCREDIBLE! Needless to say, I was sold on this dish and already couldn’t wait to go back for more. Unfortunately, when I did go back, they no longer had the item on the menu (NOOOO!!!). Despite my disappointment, I was inspired to create my own version of this delicious dish at home!
Recreating meals I’ve enjoyed at restaurants is always an interesting process for me (so many fails). You see, I am no chef. I’m most certainly a beginner who has A LOT to learn. Also, I don’t always love the process of cooking. There are times when it’s fun, especially when cooking with family or friends and the dish ends up tasting good! And then there are times when it is absolutely miserable. The food tastes terrible, or it takes FOREVER, and it just makes me wish I had ordered take-out. I’m hoping the better I get, the more I will enjoy the process and the end result!
Because of my beginner status, I really like to try things that are fairly easy and quick to make. Which is why I was SO excited about this meal! The entire process took about 30 minutes! And it tasted incredible, if I do say so myself! This one will definitely make it into my Favorite Go-To Recipes box! And if I can successfully make this, you can too!
