3 Savory Toast Options


First, let me start out by saying that I'm one of those people who could eat a sandwich any time of the day. I honestly just love them. Therefore, toast is one of my favorite breakfast options during the week. It's quick, full of energizing nutrients, and easy to eat on the go!

I tend to be a creature of habit when it comes to my diet. I find things I like, and then eat those same things every day until I can't stand it anymore. It's like listening to a new song over and over and over until you never want to be within earshot of that melody again in your life. So, in attempting to keep my healthy food options interesting, I have to mix it up!

Usually, my go-to toast toppings are almond butter and fruit (yes, there will be a post on that in the near future), making it a sweet option for breakfast. For lunch and dinner, however, I typically crave many different flavors. I decided to mix it up in some simple ways for a more savory option, and let me tell you, these did not disappoint!  

Below are 3 of my favorite savory toast options, all on Ezekiel 4.9 Bread, and all under 300 calories!


The Rad Turkey

Hummus, Radishes, Turkey, Chopped Green Onion, with Salt + Fresh Cracked Pepper

This is a perfect option for lunch and it seriously takes about 2 seconds to make. I used a mandolin (very carefully) to thinly slice the radishes, but using a knife to chop them up would work just as well! My motto is usually taste over presentation!

How pretty are radishes?! I haven't eaten a lot of those in my day, but they gave this the perfect combination of crunchy and creamy textures. It's safe to say they may quickly become a common staple in the Diaz kitchen.


The Caprese

Mozzarella, Tomatoes, Basil, Balsamic Vinegar Glaze

This one though... So. Good!!! I could've probably eaten three of these. Also, I had no idea how to make balsamic glaze (which is super easy), but the incredibly talented and hilarious Pioneer Woman does. So I followed her directions and it worked perfectly! Just make sure you don't stand directly over the boiling vinegar and inhale... it's not a fun time.

I have to be honest here... I tried so hard to get all fancy and artfully drizzle the balsamic glaze onto the tomatoes and mozzarella. In my mind, it was going to be so beautiful (sigh). It is quite clear I've got some work to do on my presentation. However, it tasted AMAZING, which is the only thing that counts in my book! Seriously, it's so good!


The Avocado + Poached Egg

Avocado, Egg, Red Onion, Red Chili Flakes

This one has been a favorite of mine (and my husband's) for quite some time. It's incredibly delicious and super filling. Really though, do you need an excuse to eat avocado? If you're like me, no, no you don't. The red onion adds some awesome flavor as well as some crunch (apparently I really like the crunchy + creamy texture combo). I also love the spice that the red pepper flakes add to this one!

If you're not a fan of poached eggs this would still be awesome with a fried or scrambled egg or egg white. It would be good with turkey too. And probably (definitely) bacon... Just so many options!
