Gluten-Free Ginger Spice Cookies
Nothing makes me happier during this time of year than all of the many gatherings that take place. My social calendar in December is typically overbooked in the best kind of way! Spending time with close friends and family is something I truly cherish during this season, and it serves as a beautiful reminder of how fortunate I am. Mix all of that with christmas lights and baking and my heart is full and cozy!
My close friends and I have a few traditions we look forward to all year, one of those being an annual cookie swap party. Each one of us picks a recipe and brings about a dozen cookies, so we can all try something new! We get together at one of our homes, eat dinner, lounge in our comfiest yoga pants, and conclude the night by eating as many cookies as we can stomach! It's one of my favorite traditions and makes us all the more thankful for stretchy yoga pants.
I love ginger and will happily eat it in any and all forms. In fact, ginger snaps have always been one of the first signs of the holidays for me. So naturally, I decided to contribute Ginger Spice cookies to this year's party. Usually, I purchase the dough pre-made, but since I've been on a little baking kick lately, I decided to try to make them from scratch.
Ginger has been known to help prevent nausea, especially morning sickness. It also contains anti-inflammatory properties that may help in reducing muscle pain and osteoarthritis. A few other health benefits include lowering blood sugar and cholesterol levels, improving symptoms of indigestion, and reducing menstrual pain.
Most of the time when I bake for a group of people, I try to make healthy substitutions, as well as adapting ingredients to meet specific dietary restrictions. I decided to make these cookies gluten-free, and did my best to use organic ingredients. Despite those facts, this is still considered a sweet treat, and is best savored in moderation with a glass of almond milk!
One thing I'm interested in trying with these in the future is adding chopped up candied ginger. I'll be sure to update this recipe when I try it! After all, the more ginger the better!
