Goat Cheese Guacamole
The Super Bowl is this Sunday and although I haven't watched a single NFL game this year, we will definitely gather with friends to watch this one! One of my favorite things to do is spend time with friends and family over delicious food! It may be the southerner in me, but I love it when everyone brings a homemade dish and enjoys it potluck style. It's a great way to try new foods and swap recipes!
One of my go-to side dishes is guacamole. It's extremely easy to make and takes hardly any time to prepare! Guacamole is also versatile, in that it pairs well with many foods and may come in many different varieties. My favorite recipe is simple, but I've been known to add pistachios, pomegranate seeds, and pineapple whenever I'm wanting to mix it up!
Avocados are one of my favorite fruits! While they contain large amounts of potassium and fiber, avocados are largely known for their abundance of heart healthy (monounsaturated) fats, which contain oleic acid and support the body's ability to reduce inflammation, lower cholesterol, and fight free radicals. They also allow your body to better absorb the nutrients you eat, so feel free to eat this superfood with your veggies!
This recipe is definitely a crowd pleaser and will be gone not long after it's made, so don't be surprised if you have to double, or even triple, the amount! I love eating this with nut crackers, corn tortillas, and pretzels!
