Shrimp Fajita Quesadillas with Cilantro Lime Sauce
Happy Cinco de Mayo! I pretty much love any excuse to eat Mexican food! Homemade fajitas are a common dish at our home for the simple fact that they're easy, quick to prepare, and can be packed full of flavorful vegetables that make it a perfect dinner option. From the moment I learned how to properly pronounce "quesadilla", I have been a big fan. Usually, they're loaded with oil and cheese, so I wanted to try a lighter, more nutritious version that I could eat more often.
I'm a big fan of spicy foods, so I was thoroughly pleased with all the flavor this recipe contained. Bell peppers are awesome sources of magnesium, folate, and thiamin, as well as the vitamins A, C, K, and B6 (all of which help our bodies function properly). These quesadillas could easily go for the main course or an appetizer if you're having some friends over!
This Cilantro Lime Sauce is one of my favorite condiments (and I love condiments)! If you like sour cream, this will be right up your alley! And since the base is plain greek yogurt, it adds a little more protein rather than saturated fat. It's also really easy to customize based on your preferences.
I also highly recommend my Goat Cheese Guacamole to accompany this... You won't be sorry!
